BLACK PEPPER
The King of Spices (Black Gold)
Primarily, Black Pepper is the world’s most traded spice. However, not all pepper is created equal. India is the historic home of Piper Nigrum. Therefore, Vanyam Exports trades in the legendary “Malabar” and “Tellicherry” varieties. These are the gold standard. In contrast to Vietnam, which produces volume, India produces flavor.
We source directly from the high-altitude vines of the Western Ghats. As a result, our Black Pepper has high density and heavy oil content. Moreover, it offers a complex flavor. It balances biting heat with floral, citrusy notes.
Origin & Terroir: Why Indian Pepper?
Specifically, great pepper requires heavy rainfall, humidity, and elevation. We source from specific belts in Kerala and Karnataka. Consequently, these conditions are perfect for the spice.
The “Bold” Advantage: Notably, we focus on berries that mature fully on the vine. Thus, this results in a larger, darker, and more wrinkled berry. On the other hand, competitors often harvest immaturely.
Sun-Dried Purity: Following the harvest, we thresh and sun-dry the green spikes on clean mats. We wait until the skin turns deep black-brown. Ultimately, this traditional drying locks in the Piperine and volatile oils.
The Sensory Profile
To a master blender, Vanyam’s pepper offers a dual experience:
The Bite (Pungency): First, this is driven by the alkaloid Piperine. Our pepper delivers a sharp heat. Furthermore, it is clean and clearing. It doesn’t just burn; it activates the palate.
The Bouquet (Aroma): Second, this is where Indian pepper outshines the rest. Crack a Vanyam peppercorn, and you will smell pine and citrus. For this reason, it is vital for premium perfumery and food.
Applications
Additionally, our high-grade pepper serves many industries:
Meat Curing: For example, the anti-microbial properties make it essential for curing salamis and sausages.
Oleoresin Extraction: Also, the high volatile oil content is ideal for extractors. They produce Piperine for supplements.
Table Condiments: Finally, the uniform size of our TGEB grade makes it visually perfect for glass grinders.
